Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas
Instructions
- Place chicken, onion, carrots, and celery in the slow cooker.
- Pour in chicken broth and diced tomatoes.
- Add thyme, rosemary, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken is cooked through.
- Stir in frozen peas during the last 30 minutes of cooking.
- Serve hot.
Notes
- You can add other vegetables like potatoes or corn.
- For a thicker stew, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir into the stew during the last 30 minutes of cooking.
