Description
A hearty and easy slow cooker cowboy casserole with ground beef, beans, and corn.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 cup beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- Add the browned ground beef, chopped onion, and minced garlic to your slow cooker.
- Stir in the kidney beans, black beans, corn, diced tomatoes with green chilies, and beef broth.
- Season with chili powder, cumin, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the shredded cheddar cheese during the last 15 minutes of cooking, or until melted.
- Serve hot.
Notes
- You can add other vegetables like bell peppers or peas.
- Adjust the spice level with more or less chili powder.
- This casserole is great served with cornbread or rice.
