- 3–4 pound beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 4 carrots, peeled and chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Season the beef roast generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
- Place the seared roast in your slow cooker.
- Add the sliced onion, chopped carrots, celery, and minced garlic around the roast.
- In a small bowl, whisk together the beef broth, red wine (if using), and Worcestershire sauce.
- Pour the liquid mixture over the roast and vegetables.
- Sprinkle dried thyme and rosemary over the top.
- Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is fork-tender.
- Remove the roast and vegetables from the slow cooker. Let the roast rest for 10 minutes before slicing.
- Serve the pot roast with the vegetables and cooking liquid.
Notes
- For a thicker gravy, you can remove the liquid from the slow cooker and simmer it on the stovetop with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water).
- Feel free to add other vegetables like potatoes or parsnips.
