Ingredients

  • 34 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 4 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
  3. Place the seared roast in your slow cooker.
  4. Add the sliced onion, chopped carrots, celery, and minced garlic around the roast.
  5. In a small bowl, whisk together the beef broth, red wine (if using), and Worcestershire sauce.
  6. Pour the liquid mixture over the roast and vegetables.
  7. Sprinkle dried thyme and rosemary over the top.
  8. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is fork-tender.
  9. Remove the roast and vegetables from the slow cooker. Let the roast rest for 10 minutes before slicing.
  10. Serve the pot roast with the vegetables and cooking liquid.

Notes

  • For a thicker gravy, you can remove the liquid from the slow cooker and simmer it on the stovetop with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water).
  • Feel free to add other vegetables like potatoes or parsnips.
