Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 pint strawberries, hulled and quartered
  • 1 tablespoon sugar
  • 1 teaspoon balsamic glaze
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange baguette slices on a baking sheet. Brush both sides with olive oil.
  3. Bake for 8-10 minutes, or until golden brown and crisp.
  4. In a bowl, toss strawberries with sugar and balsamic glaze.
  5. Spread strawberries on a separate baking sheet and roast for 10-12 minutes, until slightly softened.
  6. In a small bowl, mix ricotta cheese with chopped basil, salt, and pepper.
  7. Spread a layer of ricotta mixture onto each toasted crostini.
  8. Top with roasted strawberries.
  9. Serve immediately.

Notes

  • For a touch of tang, you can substitute goat cheese for some of the ricotta.
