A delightful appetizer featuring toasted crostini topped with creamy ricotta and sweet roasted strawberries.
Ingredients

- 1 baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 pint strawberries, hulled and quartered
- 1 tablespoon sugar
- 1 teaspoon balsamic glaze
- 1 cup ricotta cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Arrange baguette slices on a baking sheet. Brush both sides with olive oil.
- Bake for 8-10 minutes, or until golden brown and crisp.
- In a bowl, toss strawberries with sugar and balsamic glaze.
- Spread strawberries on a separate baking sheet and roast for 10-12 minutes, until slightly softened.
- In a small bowl, mix ricotta cheese with chopped basil, salt, and pepper.
- Spread a layer of ricotta mixture onto each toasted crostini.
- Top with roasted strawberries.
- Serve immediately.
Notes
- For a touch of tang, you can substitute goat cheese for some of the ricotta.
- Add a drizzle of honey for extra sweetness.
- Garnish with extra basil leaves.
