Ingredients

- 1 cup cooked chicken, shredded
- 1 cup cooked rice
- 1 cup corn
- 1/2 cup black beans
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook rice according to package directions.
- Grill or cook chicken until done, then shred.
- Sauté corn with olive oil, chili powder, salt, and pepper.
- Combine rice, chicken, corn, black beans, and red onion.
- Mix lime juice and cilantro.
- Top the bowl with lime-cilantro mixture.
