Ingredients
- Chicken breast (8 oz)
- Cooked rice (1 cup)
- Corn (1 cup)
- Black beans (1/2 cup)
- Red onion (1/4 cup)
- Bell pepper (1/2 cup)
- Cilantro (2 tbsp)
- Lime juice (1 tbsp)
- Chili powder (1 tsp)
- Cumin (1 tsp)
- Olive oil (1 tbsp)
- Salt and pepper to taste
Instructions
- Season chicken with chili powder, cumin, salt, and pepper.
- Cook chicken in olive oil until done.
- Cook corn, bell pepper and red onion.
- Combine rice, chicken, corn, black beans, red onion and bell pepper.
- Top with cilantro and lime juice.
