Description

Ingredients

  • 23 lbs beef chuck roast
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef roast with salt and pepper.
  2. Sear the roast in a hot pan until browned on all sides.
  3. Place the onion, carrots, and celery in the slow cooker.
  4. Add the garlic, beef broth, red wine (if using), tomato paste, thyme, and rosemary.
  5. Place the seared roast on top of the vegetables.
  6. Cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  7. Shred the beef with two forks.
  8. Serve with your favorite sides.

Notes

  • You can add potatoes to the slow cooker during the last 2-3 hours of cooking.
  • For a thicker sauce, mix a tablespoon of cornstarch with a tablespoon of cold water and stir into the slow cooker during the last 30 minutes of cooking.
