Make a comforting Sunday-style beef dinner in your slow cooker.
Ingredients

- 2–3 lbs beef chuck roast
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Season the beef roast with salt and pepper.
- Sear the roast in a hot pan until browned on all sides.
- Place the onion, carrots, and celery in the slow cooker.
- Add the garlic, beef broth, red wine (if using), tomato paste, thyme, and rosemary.
- Place the seared roast on top of the vegetables.
- Cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Shred the beef with two forks.
- Serve with your favorite sides.
Notes
- You can add potatoes to the slow cooker during the last 2-3 hours of cooking.
- For a thicker sauce, mix a tablespoon of cornstarch with a tablespoon of cold water and stir into the slow cooker during the last 30 minutes of cooking.
