Simple and delicious sweet potato taco bowls. A healthy and easy weeknight meal.
Ingredients

- 1 large sweet potato, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 pound ground turkey or beef
- 1 packet taco seasoning
- 1 cup cooked quinoa or rice
- Toppings: shredded lettuce, pico de gallo, avocado, sour cream or Greek yogurt, your favorite taco toppings
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, chili powder, cumin, salt, and pepper.
- Roast sweet potato for 20-25 minutes, or until tender.
- While sweet potato roasts, brown ground meat in a skillet. Drain any excess fat.
- Stir in taco seasoning and follow package directions.
- Assemble bowls: Layer quinoa/rice, meat, sweet potato, and toppings.
- Enjoy your healthy and flavorful taco bowls!

- For a vegetarian option, substitute the meat with black beans or lentils.
