Description

A refreshing and flavorful cold pasta salad with taco-inspired flavors.


Ingredients

  • 1 pound pasta
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped onion
  • 1/2 cup chopped black olives
  • Optional toppings: chopped tomatoes, avocado, cilantro

Instructions

  1. Cook pasta according to package directions. Drain and rinse.
  2. Brown ground beef. Drain off any fat.
  3. Stir in taco seasoning and salsa. Simmer for a few minutes.
  4. In a large bowl, combine cooked pasta, meat mixture, cheese, sour cream, onion, and olives.
  5. Mix well.
  6. Chill for at least 30 minutes before serving.
  7. Add optional toppings before serving.

Notes

  • You can substitute ground turkey or chicken.
  • Adjust the amount of taco seasoning to your preference.
