A refreshing and flavorful cold pasta salad with taco-inspired flavors.
Ingredients

- 1 pound pasta
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup chopped onion
- 1/2 cup chopped black olives
- Optional toppings: chopped tomatoes, avocado, cilantro
Instructions
- Cook pasta according to package directions. Drain and rinse.
- Brown ground beef. Drain off any fat.
- Stir in taco seasoning and salsa. Simmer for a few minutes.
- In a large bowl, combine cooked pasta, meat mixture, cheese, sour cream, onion, and olives.
- Mix well.
- Chill for at least 30 minutes before serving.
- Add optional toppings before serving.
Notes
- You can substitute ground turkey or chicken.
- Adjust the amount of taco seasoning to your preference.
- For a spicier salad, use a hotter salsa.
