- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped onions
Instructions
- Brown ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in kidney beans, pinto beans, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, and cayenne pepper (if using).
- Season with salt and pepper to taste.
- Bring to a simmer, then reduce heat and cover. Cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
- Serve hot with your favorite toppings.
Notes
- For a thicker chili, you can mash some of the beans with a fork.
- Adjust the amount of cayenne pepper to control the heat.
- This chili tastes even better the next day.
