- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chopped potatoes (about 1 medium)
- 1 cup chopped green beans (fresh or frozen)
- 1 cup corn (fresh or frozen)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and add diced tomatoes.
- Add potatoes, green beans, corn, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker soup, you can mash some of the potatoes against the side of the pot.
- Add other vegetables like peas, zucchini, or spinach if desired.
- This soup can be made ahead and reheats well.
