Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped potatoes (about 1 medium)
  • 1 cup chopped green beans (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add diced tomatoes.
  5. Add potatoes, green beans, corn, thyme, and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a thicker soup, you can mash some of the potatoes against the side of the pot.
  • Add other vegetables like peas, zucchini, or spinach if desired.
  • This soup can be made ahead and reheats well.
